This is a fairly lazy meal, particularly if you want to cheat any buy pre-made mustard and cider sauce. Lazy, but tastes good.
You can make it a little healthier by substituting the cream out for something with less fat, though I personally wouldn't skip the lardons as they may be the only reason this is so tasty
I've been experimenting with making meals without meat in them, the idea being that we could (once or twice a week) potentially have a meatless meal - bringing food costs down, as well as introducing a bit more nutrition variety.
This is a slightly amended version of Jack Monroe's "Carrot, Cumin Kidney Bean Burgers". In the original recipe, the Cumin does most of the flavouring work, and we just felt like it was missing something...
In the photo, they're served in a pitta bread with tomato chutney and mixed leaf salad - Also had wedges on the side.
These came about because we decided to make brownies, but I couldn't be arsed to deal with melting chocolate so wanted to make them with Cocoa only. Was a little bit worried that it'd result in a loss of volume though, so wanted to add something to bulk it back out.
My cake pan is actually too large for this recipe, and my mixing bowl too small to make more in one go. So, rather than buying and storing yet more kit, the approach we tend to take is to make one set of the mix, measure out new ingredients and then make another set. This means you can do layered stuff like (in the pic) having a darker layer with just raspberries in it beneath a lighter layer with raspberry and white chocolate
The volume loss of not having the chocolate isn't actually that great though (the coca increase offsets it quite well), so you can just as easily leave out the raspberries and white chocolate if you prefer straight brownies.
This recipe is for Korean Egg-Bread, usually served as a street food and known as gyeran-ppang. It is, in essence, a (small) loaf of sweetenend pancake batter with an egg baked in.
Basically, I saw this video and thought... WANT. If nothing else, Koreas a bit far for a weekend jaunt, so I had a hunt around for recipes online, and then tweaked them slightly to suit my taste.
So, there's no claim that this is particularly authentic, but it does make a good snack or breakfast.
This is an adjustment of Jack Monroe's Peach Chickpea Curry.
It adds some potato (not only do I like curried potato, but I fine I need the bulk) as well as increasing the spice. To offset the increased spice, some raisins are added to contribue sweetness (plus they absorb curry juice for a delicious taste).
It's easy to cook, and doesn't require too much effort.
If you keep a little back when serving, then the next night you can re-heat, mix into pasta and serve with chopped sausages.
Dirty fries are awesome.
If you're doing it properly then really you want to be slicing potatoes, lightly frying them into chips and then using those, but that takes more time and effort than I'd normally have spare on a weekday evening. But, for 10 minutes prep you can quite easily make them using some frozen chips.
In the picture, I've used low-fat cheese, but be aware it doesn't melt as nicely as the proper stuff (it doesn't turn into a runny gloop). Tastes fine, but isn't quite the same.
Frying onions in a pan isn't that much hassle, but there are still days when it's still too much hassle
Instead, you can cook them in the oven - perfect if you're making hotdogs as you can just oven-cook the sausages too
I love pasties, so I thought I'd take a shot at making my own.
We ate ours hot out of the oven with chips and veg.
Pork chops are something of a staple for us, but sometimes it's nice to add a small twist to them
This is simple to make, and can easily be changed to use Sweet Chilli, or Chive cheese instead
I haven't made Vodka jelly in years, but the memories I do have are fond.
You can swap the Vodka out for things like Malibu (Coconut Rum) fairly successfully too
