Dirty fries are awesome.
If you're doing it properly then really you want to be slicing potatoes, lightly frying them into chips and then using those, but that takes more time and effort than I'd normally have spare on a weekday evening. But, for 10 minutes prep you can quite easily make them using some frozen chips.
In the picture, I've used low-fat cheese, but be aware it doesn't melt as nicely as the proper stuff (it doesn't turn into a runny gloop). Tastes fine, but isn't quite the same.

Ingredients
- 1 red pepper
- 3 spring onions
- 1 Onion
- 150g cheese (grated)
- Worcester Sauce
- Cajun Spice
- Frozen Chips
Method
- Set the oven pre-heating to 180c
- Put the chips into a deep pan
- Sprinkle 1tsp Cajun seasoning over the chips
- Thinly slice the spring onions
- Dice the onion and red pepper
- Heat up a frying pan with a small amount of cooking oil in the bottom
- Sprinkle 1tsp Cajun seasoning over the oil and add a few drops of Worcester Sauce
- Add the spring onion, onion and red pepper
- Lightly fry until they begin to soften
- Carefully mix them in with the chips, using a fork to toss the chips so that it's well mixed
- Add some Worcester sauce to the mixture
- Sprinkle the cheese on top, and toss again to mix it through
- Cook in the oven for 30 minutes
