I haven't made Vodka jelly in years, but the memories I do have are fond.
You can swap the Vodka out for things like Malibu (Coconut Rum) fairly successfully too

Ingredients
- 2 135g Fruit Jelly block packs
- 300ml boiling water
- 500ml vodka, chilled
- 400ml cold water
Method
- Cut up the jelly
- In a large bowl, mix the boiling water with the jelly pieces
- Stir until the jelly disolves
- Stir in the vodka and cold water
- Pour into shot glasses (or ice-cube trays)
- Refrigerate for at least an hour (overnight is better)
