Lemongrass and Coconut Paste

This recipe will make a Lemon grass and coconut paste for use in stir-frys etc. If you want to instead make a sauce, follow the steps below, and then add it to 1 can of boiling coconut milk, stir until it's well mixed and then strain off any solids before pouring over your meal.

Sticky Chicken Stir Fry

I first made this in order to use up some left over goujons from a meal I'd cooked earlier in the day. The breadcrumbs soak up a mix of the oil and the stiryfry sauce and create a sticky coating around the chicken at the core

The Goujons can be left in the oven to cook, and you'll only spend about 5 minutes at the pan stir-frying, so it's a fairly quick and low effort meal to make

Serve with Rice or noodles

Soft cakey outside, with gooey chocolate in the middle

The temperature of your oven will affect how firmness or softness these puddings come out. If the first pudding turned out of it's tin is too soft, then cook the remaining puddings for another couple of minutes.

Microwave Rice Cooker

A little while ago, I bought one of these Microwave rice-cookers. It saves a bit of time and hassle, and a lot of energy compared to boiling rice on the hob.

The only real downside, really, is in trying not to lose the booklet which gives the cooking timing, so for ease of reference they're detailed in this page

The cup referred to in the measurement table is the 200ml plastic cup that comes with the cooker (i.e. it's smaller than a US cup)

For a slightly saner measurement, 1/4 cup of short grain rice weighs in at 45 grams. 1/2 cup at 90g

Sausage and Mash Pie

Basically: Bangers and Mash, as a pie

This meal can easily be prepared in advance (just add 15 minutes to the cooking time if you're pulling it out of the fridge), and doesn't require too much prep (the majority of the time really, is waiting for the spuds to boil)

You don't need to use the best, most expensive sausages, as they're being cooked in other flavours, but try not to go with the absolute cheapest either as they tend to be a pain to cook

Chops and Veg in Peppercorn Sauce

I like this recipe because it's relatively low effort - I can do a little bit at the beginning, and then wander off and rest for a while once things have gone in the oven

The recipe uses packet Peppercorn Sauce to keep the effort low, but you can also make your own peppercorn sauce.

I love peppercorn sauce, and will eat it on pretty much anything.

It's actually quite quick and simple to make from scratch too, and tastes a lot better than packet stuff

To make this recipe lighter, instead of using cream you can use a small amount of water instead to adjust the consistency

Spinach, Bacon and Cheese Quiche

If youre going to eat Spinach, in my opinion, the only acceptable way to do so is in a quiche.

If you want a lower fat recipe, you can substitute:

  • Milk with skimmed milk
  • Cheese with low fat cheese
  • Ham instead of bacon
  • Cream with creme fraiche

You can also trivially make your own pastry for this if you're willing to spend a little extra time
