I'm a fan of fried food in sandwiches, but sometimes a little adjustment can make a classic all the better. You can create a tamer variation by replacing the chilli with basil, but I like my food hot. For a real flameball add some Tabasco sauce as well

Ingredients
- 2 Slices Bread (White or Brown)
- 2 Eggs
- Crushed Chilli
- Sunflower Oil
- Brown Sauce
Method
- Heat the oil on a low heat
- Add the eggs before the heat rises to the correct cooking temperature
- Whilst the whites are still liquid add some crushed chilli
- Cook as normal until the whites are solid but now browned
- Pierce the yokes and flip the eggs over
- Cook until the edges are slightly browned
- Take the eggs from the pan and place on top of one of the slices of Bread
- Add brown sauce to taste
- Put the other slice on top
- Serve without cutting in half
