We love fajitas, but normally I've made them with chicken, using a pack.
This recipe, though, is less hassle than using something like an Old El Paso kit - the prep is about the same, but then you just shove it in the oven and go do something else for 30 minutes. Tasty fajitas, with minimum effort.
You can use casserole chunks, or stir fry strips - whichever you choose, make sure it's decent quality meat otherwise it may come out too chewy.
If you've any left over at the end of the meal, keep overnight, then warm at lunch and put in a sandwich.
OK, the name is a travesty, but it means I can easily find the recipe again. There's no Lasagne pasta in there.
This is a variation of Mary Berry's Mexican Tortilla Bake recipe - essentially making it easier/lazier to make and boosting some ingredients to reduce the amount of meat you need to put in.

For ease of serving, I only put 2 Tortilla layers in - if you want more you can just adjust the amount of mascarpone/cheese you put on each layer.
You can prepare this a few hours ahead of cooking it if you want, just make sure it's left covered and in a cool area.

A Korean cucumber salad, essentially cucumber and carrot in a lightly spiced vinaigrrete.
The spring onion can be replaced with chopped spinach to reduce the punch a little. Either way, works very well served alongside Beef Bulgogi
This is an adjustment of Jack Monroe's Peach Chickpea Curry.
It adds some potato (not only do I like curried potato, but I fine I need the bulk) as well as increasing the spice. To offset the increased spice, some raisins are added to contribue sweetness (plus they absorb curry juice for a delicious taste).
It's easy to cook, and doesn't require too much effort.
If you keep a little back when serving, then the next night you can re-heat, mix into pasta and serve with chopped sausages.
Dirty fries are awesome.
If you're doing it properly then really you want to be slicing potatoes, lightly frying them into chips and then using those, but that takes more time and effort than I'd normally have spare on a weekday evening. But, for 10 minutes prep you can quite easily make them using some frozen chips.
In the picture, I've used low-fat cheese, but be aware it doesn't melt as nicely as the proper stuff (it doesn't turn into a runny gloop). Tastes fine, but isn't quite the same.
I'm not a fan of fish at all, so haven't tried this myself. It's gone down well with everyone I've served it to though.
Serve with rice and poppadoms
A delicious red Thai curry, partially based on a recipe from a book called Accidentally Vegetarian, works well without the chicken if you want to be meat free
Personally I've always considered this a side, but purely because of the lack of meat, there's no real reason it can't be served as a main though
Serve with naan bread or rice.
