I've been experimenting with making meals without meat in them, the idea being that we could (once or twice a week) potentially have a meatless meal - bringing food costs down, as well as introducing a bit more nutrition variety.
This is a slightly amended version of Jack Monroe's "Carrot, Cumin Kidney Bean Burgers". In the original recipe, the Cumin does most of the flavouring work, and we just felt like it was missing something...
In the photo, they're served in a pitta bread with tomato chutney and mixed leaf salad - Also had wedges on the side.
This is an adjustment of Jack Monroe's Peach Chickpea Curry.
It adds some potato (not only do I like curried potato, but I fine I need the bulk) as well as increasing the spice. To offset the increased spice, some raisins are added to contribue sweetness (plus they absorb curry juice for a delicious taste).
It's easy to cook, and doesn't require too much effort.
If you keep a little back when serving, then the next night you can re-heat, mix into pasta and serve with chopped sausages.
Frying onions in a pan isn't that much hassle, but there are still days when it's still too much hassle
Instead, you can cook them in the oven - perfect if you're making hotdogs as you can just oven-cook the sausages too
It's a bit of a winter thing, but parsnip soup is gorgeous when I can get it
Makes a good side dish, lightly dressed asparagus is gorgeous!
Great as a starter, but also works quite well as a side. Everyone loves stuffed peppers!
The closest thing I could describe these as is Potato Bahjii's. Quite quick and easy to make, if a little messy, but ultimately well worth it
If you want to freeze them, fry for a minute and then allow to cool before putting straight into the freezer (they'll keep for a little while)
Great as either a side or part of the main course
Personally I've always considered this a side, but purely because of the lack of meat, there's no real reason it can't be served as a main though
Serve with naan bread or rice.
