Parsnip and Ham Soup

It's a bit of a winter thing, but parsnip soup is gorgeous when I can get it

Ingredients

  • Trimmed leeks
  • Wiltshire Ham
  • Parsnips
  • 2 Vegetable stock cubes

Method

  1. Sautee chopped leeks in a little oil
  2. Add chopped, cooked ham
  3. Add peeled, diced parsnips
  4. Make up and pour in vegetable stock
  5. Bring to the boil
  6. Cook until the veg are soft and tender
  7. Add a little ground pepper then liquidise
  8. Serve garnished with a sprig of thyme
