Thanks to the Fresh Prince, everyone's heard of a Philly Cheese-Steak, but you can't get those outside of Philadelphia, so this recipe doesn't claim to be one. What it is, is a tasty steak, onion and cheese sauce sandwich.
There are multiple variations you make, even down to how thickly you slice the steak pieces, either way, the cheese sauce can get quite messy if you put enough on (and you want there to be enough).

Ingredients
- 21g butter
- 8g flour
- 120ml Milk
- 200g grated cheese (cheddar or cheddar mixed with mozzarella works well)
- 2 thin steaks (often sold as Sizzle steaks)
- 1 Onion
- 4 Baguettes or Panini rolls
- Cooking Oil
Method
- Slice the steak into thin short strips
- Peel the onion and chop it into small chunks
- Slice the baguettes/rolls in half and butter
- Put the butter into a small saucepan and place over a low heat
- Once melted, stir and gradually add the flour - stir constantly to avoid lumps forming
- Once all of the flour is added you should get a roux - a stirrable sort of paste
- Stir in half the milk and stir until it thickens (takes a minute or two)
- Add the remaining milk and the cheese, stir it regularly and after about 5 mins you should have a smooth cheese sauce
- Meanwhile, put some cooking oil in a small frying pan and place over a medium high heat
- Add the onions to the frying pan and lightly fry
- Once the onions have started to soften, add the steak pieces in
- Fry until the steak pieces are cooked
- Pour the cheese sauce into the frying pan and mix well so that steak and onion are well spread through the sauce
- Spoon into the baguettes/rolls and serve hot
