Breakfast Burrito

This recipe makes 4 breakfast burritos - whether that's serving 4 people or 1 is up to you.

For efficiency, the bacon and sausages are done in the oven (it's being warmed to do the tomatoes anyway), but obviously you could pan fry them instead.

One thing to note - if you like your teeth, you're aiming for the bacon to be cooked properly - soft and chewy, not american style bacon glass

Ingredients

  • 2 eggs
  • 1/2 pack bacon rashers
  • 4 sausages
  • 6 on the vine cherry tomatoes
  • 4 tortilla wraps
  • Black pepper
  • Cooking oil

Method

  1. Heat the oven to 180
  2. Put the sausages and bacon onto a baking tray
  3. Put them in the oven for 20 mins
  4. In the meantime, break the eggs into a bowl
  5. Grind pepper over them
  6. Use a fork to mix them thoroughly
  7. Carefully slice the cherry tomatoes in half and arrange them on a second baking tray
  8. 6 minutes before the bacon/sausages are done, put the tomatoes in the oven
  9. When done, remove the sausages from the oven and cut them into slices
  10. Lay the tortilla wraps out on plates and put a slice of bacon on each
  11. Pile sausage slices on top
  12. Put some oil in a pan and heat it over a high heat
  13. Pour the egg mixture into the pan and use a fork to continually move/scramble it
  14. Remove the eggs from the heat a little before they've reached desired consistency (the heat from the pan will continue to heat them)
  15. Spoon the egg over the top of the tortillas
  16. Add the cherry tomatoes
  17. Drizzle with sauce (ketchup or brown)
  18. Fold the tortilla and serve immediately
