Roast Beef Cooking Times

Cooking time is calculated based on the weight of the cut, as well as whether you want the meat to be rare, medium or well done.

Plan to allow the joint to sit, covered, for 20 minutes before carving - it allows the juices to retreat back into the meat, giving a much moister cut

Sherry Trifle (with brandy custard)

Trifle's delicious, if a bit of an odd combination.

This recipebook makes a nice boozy trifle, because of the resting times, it's best if the jelly is prepared the day before - the custard and cream can be prepared on the day (but still ahead of time). It'll keep in the fridge for a few days if there's any left over.

Breakfast Burrito

This recipe makes 4 breakfast burritos - whether that's serving 4 people or 1 is up to you.

For efficiency, the bacon and sausages are done in the oven (it's being warmed to do the tomatoes anyway), but obviously you could pan fry them instead.

One thing to note - if you like your teeth, you're aiming for the bacon to be cooked properly - soft and chewy, not american style bacon glass

Low Fat Gooseberry Fool

Gooseberries (or goosgogs) grow in our garden and go well in a variety of desserts, but the best has to be gooseberry fool.

This recipe creates a low fat Gooseberry fool. In the ingredients list I've also detailed how to make a less fat-free version, but honestly, the low fat version works really well anyway.

Egg Bread

Also sometimes called Oopsie bread, or cloud bread, this is a grainless bread substitute

It doesn't rise much, but works well as a replacement for things you'd normally use bread rolls for, particularly as buns around a grilled chicken breast, just make sure the filling sits well with a slight egg flavour

This recipe grinds black pepper over the top, but you can sprinkle seeds instead if preferred

Butterscotch and gingerbread biscuits

This recipe makes gingerbread biscuits with a subtle mix of flavours.

The gingerbread is rolled a little thicker so that you get a nice crumbly inside - if you want thin and crunchy then when rolling out aim for about 0.5cm thickness.

Chocolate Torte

Chocolate Torte can be very rich and heavy, but it can also be incredibly flexible.

This recipe gives the basis of a good (and heavy) torte, which can easily be modified - whether by adding rum/whisky to the mix, or by putting a layer of fruit (black cherry or raspberries are both winners) in the middle

Serve with double cream or ice-cream
