Also sometimes called Oopsie bread, or cloud bread, this is a grainless bread substitute
It doesn't rise much, but works well as a replacement for things you'd normally use bread rolls for, particularly as buns around a grilled chicken breast, just make sure the filling sits well with a slight egg flavour
This recipe grinds black pepper over the top, but you can sprinkle seeds instead if preferred

Ingredients
- 3 eggs
- 110g low fat cream cheese
- 1/2 tsp baking soda (optional)
- Pinch salt
- ground black pepper
Method
- Cover a large baking tray in greaseproof paper
- Set the oven preheating to 150c
- Seperate the eggs, put the yolks in a small bowl and set to one side for use later
- Put the whites into a clean bowl and add the salt
- Whisk the whites until very stiff (you should be able to upturn the bowl without any movement)
- Take the bowl of egg yolks and add the cream cheese to it
- Add the baking powder
- Mix well with a fork, the cheese will start to break down and mix into the yolk
- Gently fold the yolk mixture into the whites - try and avoid pushing air out of the whites
- Make 4-6 dollops on the baking tray
- Grind black pepper over the top
- Bake in the middle of the oven for 25 mins (or until they turn golden)
- Allow to cool on the tray
