An easy pulled pork recipe - it's low on fat/carbs and high in protein so fits anyone on a Paleo type diet.
Diet or not, it's tasty and low effort.

Ingredients
- 2 tbsp cooking oil
- 1.5KG pork loin
- 1 tin chopped tomatoes
- 200ml chicken stock
- 1 Onion
- 3 Carrots
- 2 cloves garlic
- 1tsp chopped rosemary
- 1/2 tsp thyme
- Salt/pepper (to taste)
Method
- Peel and chop the carrots and onions
- Put a large pan over a high heat and add the cooking oil
- While waiting for it to heat up, put the pork loin onto a plate
- Add the salt, pepper, rosemary and thyme to the loin and rub into (focusing on the meat rather than fat)
- Once the pan is hot, put the loin into it, and sear all sides (2-3 mins each side)
- Put the loin into the bottom of the slow cooker
- Empty the tinned tomatoes over the top of it
- Pour in the stock
- Add the carrots and onions
- Peel and crush the garlic into the slow cooker
- Put the lid on and cook on low for 8 hours
- Use two forks to shred the meat - serve in a bowl, with mash or noodles
