Although they're best marinated overnight, these pork skewers are otherwise quick and easy to make and go well with a mix of things

Ingredients
- 1 tsp dried chilli flakes
- 2 tsp dried mixed herbs
- 1/2 tsp lime juice
- 2 tbsp honey
- 1 tsp cooking oil
- 2 pork chops
- 2 Peppers
- 3 small Onions
Method
- Chop the pork chops into small squares with scissors
- Place into a bowl
- Gently warm a pan with the cooking oil in
- Add the chilli flakes and mixed herps
- Stir in the lime juice
- Stir in the honey
- Heat until the mix is nice and runny
- Pour over the pork chunks and use a pair of spoons to stir the pork well into the marinade
- Cover the bowl with tinfoil and marinate in the fridge overnight
- Preheat the oven to 180
- Deseed and chop the peppers into squares
- Chop the onions into eighths
- Retrieve the pork from the fridge
- Push a chunk of pork onto a skewer
- Push some pepper and onion on, followed by another pork chunk
- Repeat until the swewers are all filled
- Place the skewers on a baking tray (or in a skewer tray like the one pictured)
- Cook for 20 mins
- Serve with salad and mash
