Halloumi and Veg Bake

A nice simple mediterranean style dish. Quick, cheap and easy to prepare, if you really need veg then lardons can be mixed in with the veg before cooking

Goes well when served with bread and oil as a side.

Ingredients

  • 2 red onions
  • 3 peppers
  • cherry tomatoes
  • 2 tbsp olive oil
  • 2 tsp dried italian herbs
  • 250g halloumi cheese

Method

  1. Set the oven preheating to 220c
  2. Peel the onions and chop into wedges
  3. Put the onions into the bottom of a large ovenproof roasting dish
  4. De-seed and chop the peppers into large chunks and add to the dish
  5. Add a handful of cherry tomatoes to the dish
  6. Sprinkle the olive oil over the veg
  7. Sprinkle the dried italian herbs over the veg
  8. Stir the veg around well until it's well coated in oil and herbs
  9. Put into the oven for 25 minutes
  10. Meanwhile, drain the halloumi and slice it
  11. About 5 mins before the veg will be done, set the grill warming on high
  12. When the veg is ready, remove the dish from the oven
  13. Place the halloumi on top of the veg
  14. Place the dish under the grill for 5 minutes, or until the cheese is starting to go golden brown
  15. Serve immediately
