Lemon Bombe

A delicious creamy frozen dessert. Recipe courtesy of my dad, best eaten on it's own but goes well with a chocolate sauce too

Lemon is the best (IMO) but variations of this can be made with strawberry Jam, Lime curd or Nutella

Ingredients

  • 1 pt whipping cream
  • 1 jar lemon curd
  • 1 lemon (grated rind and juice)
  • 8 meringue nests

Method

  1. Whip cream until stiff
  2. Fold in lemon curd, juice, and grated rind
  3. Crush meringue nests into small pieces and fold into mixture
  4. Line two basins with cling film (freezable type)
  5. Pour mixture into basins and freeze (about 5 hours)
