Someone I follow on Twitter tweeted about making these and provided a link to the original recipe. I love cinnamon swirls but hate waiting for pastry to prove, so figured I'd give them a go.
This recipe amends the original in a few small ways
* Uses SI for measurements
* Adjusts the sugar ratio a bit
* Does the prep first
They work really well - I was a little dubious of the inclusion of egg to begin with, but it helps the bread maintain it's shape and the other flavours drown out the egg flavour.
If you want them to look really nice, you'll need to pipe the icing on - or if you're like me, just splat it on with a spoon

Ingredients
- 150g butter
- 50g light brown sugar
- 50g granulated sugar
- 40g icing sugar
- 112g soft cheese
- 1.5 tbsp sweet ground cinnamon
- 60ml milk
- 8 slices of thick white bread
- 2 eggs
- 1 tsp vanilla extract
Method
- Measure 114g of butter, 1 tbsp of cinnamon and all of the light brown sugar into a bowl
- Use a fork to press them together until they're combined and you've got a cinnamon buttercream
- Set aside for later
- Put the granulated sugar into a bowl
- Add 1tsp cinnamon
- Use a spoon to mix together
- Set aside for later
- Measure 60ml milk into a bowl or large measuring jug
- Break the eggs into the jug
- Add the vanilla extract
- Use a fork to beat together until smooth
- Set aside for later
- Measure 112g of soft cheese into a bowl
- Add 40g icing sugar
- Add 20g butter
- Use a fork to press together until well combined and you've got a sweet cheese icing
- Cut the crusts off the bread
- Spread your cinnamon buttercream on one side of each slice
- Tightly roll the bread slices up (making 8 little swiss rolls)
- Put the rest of the butter in a frying pan and set it melting
- Dip each roll into the egg mixture and put into the frying pan
- Fry until all sides are golden
- Remove from the pan onto a plate
- Lightly dip each of the rolls into the sugar + cinnamon mixture, rolling them around to get them well covered
- Place the rolls onto a plate
- Use a spoon to drizzle the sweet cheese icing over the top
- Eat whilst warm
