I'm a fan of fried food in sandwiches, but sometimes a little adjustment can make a classic all the better. You can create a tamer variation by replacing the chilli with basil, but I like my food hot. For a real flameball add some Tabasco sauce as well

Ingredients

  • 2 Slices Bread (White or Brown)
  • 2 Eggs
  • Crushed Chilli
  • Sunflower Oil
  • Brown Sauce

Method

  1. Heat the oil on a low heat
  2. Add the eggs before the heat rises to the correct cooking temperature
  3. Whilst the whites are still liquid add some crushed chilli
  4. Cook as normal until the whites are solid but now browned
  5. Pierce the yokes and flip the eggs over
  6. Cook until the edges are slightly browned
  7. Take the eggs from the pan and place on top of one of the slices of Bread
  8. Add brown sauce to taste
  9. Put the other slice on top
  10. Serve without cutting in half
