A italian style vegetable mix, with the added flavour of a toasted wrap and cheese. Really low-effort to make, but tastes good.

Originally based on a NHS healthy eating recipe, I've added some of the flavour/fat back in (sorry).

Can be made without the lardons if meat isn't your thing. If meat is your thing, then lardons can also be swapped for slices of (pre-cooked) chicken, sausage etc.

Ingredients

  • Lardons (optional)
  • 4 tomatoes
  • 4 soft torilla wraps
  • 200g grated mature cheddar cheese
  • 1 red pepper
  • 1 yellow pepper
  • 150g closed cup mushrooms
  • 3 tsp dried italian herbs
  • Ground black pepper

Method

  1. Pre-heat the grill
  2. Slice the tomatoes
  3. Slice the peppers and mushrooms
  4. Lay the peppers and mushrooms out on a baking tray
  5. Grill the peppers and mushrooms (and lardons if you're adding them) for 4-5 mins, turning once
  6. Add the tomatoes and herbs
  7. Sprinkle/grind some black pepper over
  8. Put a tortilla wrap onto a griddle (or into a dry deep frying pan if you don't have one) and sprinkle cheese thinly over the top
  9. Cook on a medium heat for 30-60 seconds until the cheese is melted
  10. Add some of the veg mixture to one side of the tortilla
  11. Use a spatula or a fork to lift the other end and then fold it over the filling
  12. Cook for a few moments more, and then keep warm while you do the others
  13. Serve alongside salad and/or chips
