Nothing follows a good roast like a good crumble. Unlike my Sweet Rhubarb Crumble recipe, this crumble strikes a balance between apple and rhubarb
Best served with custard, but can also go with cream or ice-cream

Ingredients
- 2 Stems Rhubarb
- 6 Apples
- 75g unsalted butter (or margerine)
- 225g plain flour
- 150g granulated sugar
- 1tbsp ground cinnamon
Method
- Wash the Rhubarb
- Chop it into lengths of about 1cm
- Place into the bottom of a deep baking dish
- Peel and core the apples
- Cut each apple into slices - into 8ths (if you like some crunch) or 16ths
- Lay the apple slices in concentric circle on top of the Rhubarb pieces
- Sprinkle 4 tablespoons of granulated sugar over the apple
- Measure the flour into a large mixing bowl
- Add the remainder of the granulated sugar
- Add the ground cinnamon
- Mix together with a spoon
- Add the butter
- Wash and thoroughly dry your hands
- Use your hands to rub the flour mix into the butter, until it starts to look crumbly
- Use a spoon to sprinkle the crumble mix over the top of the fruit (don't pat it down)
- Even the crumble layer with a fork
- Sprinkle another 2 tablespoons of granulated sugar on top
- Heat the over to 200c
- Cook for 30-40 mins (or until the crumble is turning golden brown)
