Rhubarb and Apple Crumble

Nothing follows a good roast like a good crumble. Unlike my Sweet Rhubarb Crumble recipe, this crumble strikes a balance between apple and rhubarb

Best served with custard, but can also go with cream or ice-cream

Cooking Time

Prep: 10 mins
Cooking: 30 mins
Total: 40 mins

Ingredients

  • 2 Stems Rhubarb
  • 6 Apples
  • 75g unsalted butter (or margerine)
  • 225g plain flour
  • 150g granulated sugar
  • 1tbsp ground cinnamon

Method

  1. Wash the Rhubarb
  2. Chop it into lengths of about 1cm
  3. Place into the bottom of a deep baking dish
  4. Peel and core the apples
  5. Cut each apple into slices - into 8ths (if you like some crunch) or 16ths
  6. Lay the apple slices in concentric circle on top of the Rhubarb pieces
  7. Sprinkle 4 tablespoons of granulated sugar over the apple
  8. Measure the flour into a large mixing bowl
  9. Add the remainder of the granulated sugar
  10. Add the ground cinnamon
  11. Mix together with a spoon
  12. Add the butter
  13. Wash and thoroughly dry your hands
  14. Use your hands to rub the flour mix into the butter, until it starts to look crumbly
  15. Use a spoon to sprinkle the crumble mix over the top of the fruit (don't pat it down)
  16. Even the crumble layer with a fork
  17. Sprinkle another 2 tablespoons of granulated sugar on top
  18. Heat the over to 200c
  19. Cook for 30-40 mins (or until the crumble is turning golden brown)
