Welsh Rarebit

Cheese on toast is hard to beat, the only thing that could be better is mixing in some beer and egg

This Welsh Rarebit recipe adds in some Worcester sauce and paprika for additional flavour - you could use cayenne pepper instead/as well

Ingredients

  • 200g grated mature cheddar
  • 1 egg
  • 2 tbsp beer (ale or preferably stout) or milk
  • 1 tsp Worcestershire Sauce (Lea Perrins)
  • 1 tsp mustard
  • 1 tsp dried paprika
  • 4 slices white bread

Method

  1. Put 1 heaped tablespoon of cheese to one side
  2. Put the egg, beer/milk, worcester sauce, mustard and paprika into a mixing bowl
  3. Lightly beat the mixture
  4. Use a spoon to mix in the remaining cheese
  5. Put the grill on high and toast both sides of the bread (slightly undertoast one side)
  6. Spoon and then spread the mixture onto the lighter toasted side
  7. Sprinkle the reserved cheese over the top
  8. Put back under the grill until the cheese is melted and starting to turn golden brown
  9. Serve immediately
