I'm a fairly recent convert to having pork chops on rice, but when they're drenched in a good sauce it works really, really well
This recipe gives a sweet sticky sauce with a very slight hint of spice, while being really quick and easy to make - theres no prep and you can make it in 2 pans, one for the rice, one for the pork.

Ingredients
- 4 Pork Chops (or Shoulders)
- 1 Tbsp Oil
- 430g tin of Pineapple Chunks with Juice
- 100g honey
- 1/2 tsp Cajun spice
- 1/4 tsp Ground Cinnamon
- 1/2 tsp Salt
- 1/4 tsp ground black pepper
- 3 Tbsp raisins
Method
- Put oil in frying pan and heat it
- Brown the chops on each side (about 3 mins each side)
- Add liquid from the pineapple chunks to pan (keep chunks for later)
- Stir in the honey
- Stir in the Cajun spice, Cinnamon, Salt and Pepper
- Simmer for 20 minutes
- Add the pineapple chunks and raisins to the pan
- Heat through thoroughly for a few minutes
- Serve on rice
