Sloppy Joes

We don't really have/see Sloppy Joes here, they're very much a US thing, so I thought I'd give them a go. Simple to cook and make, and taste much better than they look, even if they are a little messy to eat

Using Chipotle instead of the barbecue sauce is a good improvement, or simply piling some jalapeno slaw into the bun with it. Serve with a bowl of chips and some salad

True American style would use cheese slices rather than cheddar, but I wanted proper cheese flavour in there.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion
  • 2 small red or yellow peppers
  • 2 crushed garlic cloves
  • 400g minced beef
  • 2 x 400ml cans chopped tomatoes
  • 2 tbsp smokey barbecue sauce
  • cheddar cheese block
  • 6 burger buns

Method

  1. Heat the oil in a deep frying pan
  2. Cut 4 slices from the cheese block
  3. Fry the onion, pepper and garlic for 10 mins until softened
  4. Add the mince (breaking it up)
  5. Stir and cook until the mince has browned
  6. Add the tomatoes and barbecue sauce
  7. Simmer for 10-15 mins (until the sauce thickens)
  8. Put the cheese slices on top of the mince
  9. Cover with a lid and wait for the cheese to melt into the sauce
  10. Scoop into the buns and serve
