We don't really have/see Sloppy Joes here, they're very much a US thing, so I thought I'd give them a go. Simple to cook and make, and taste much better than they look, even if they are a little messy to eat
Using Chipotle instead of the barbecue sauce is a good improvement, or simply piling some jalapeno slaw into the bun with it. Serve with a bowl of chips and some salad
True American style would use cheese slices rather than cheddar, but I wanted proper cheese flavour in there.

Ingredients
- 1 tbsp vegetable oil
- 1 onion
- 2 small red or yellow peppers
- 2 crushed garlic cloves
- 400g minced beef
- 2 x 400ml cans chopped tomatoes
- 2 tbsp smokey barbecue sauce
- cheddar cheese block
- 6 burger buns
Method
- Heat the oil in a deep frying pan
- Cut 4 slices from the cheese block
- Fry the onion, pepper and garlic for 10 mins until softened
- Add the mince (breaking it up)
- Stir and cook until the mince has browned
- Add the tomatoes and barbecue sauce
- Simmer for 10-15 mins (until the sauce thickens)
- Put the cheese slices on top of the mince
- Cover with a lid and wait for the cheese to melt into the sauce
- Scoop into the buns and serve
