Slow cooked chicken casserole

A simple chicken casserole, very much build and forget. Slow cooking leads to most meat that just falls apart

Ingredients

  • Pack of 6 boneless chicken thighs
  • 4 potatoes
  • 2 carrots
  • 1 large onion
  • Chicken Stock
  • 2 tsp Dried Basil
  • Pepper
  • Salt

Method

  1. Peel the onion and cut it into slices
  2. Peel the potatoes and cut into small chunks
  3. Peel and slice the carrots
  4. Put them into the slow cooker
  5. Put the chicken thighs into the slow cooker, on top of the veg
  6. Make up enough chicken stock to cover half of the chicken thighs
  7. Stir in the basil, and pour into the slow cooker
  8. Add salt and pepper to taste
  9. Put the slow cooker on High for an hour
  10. Switch down to medium and leave for 7 hours
