Slow Cooked Pulled Pork Ragu

An easy pulled pork recipe - it's low on fat/carbs and high in protein so fits anyone on a Paleo type diet.

Diet or not, it's tasty and low effort.

Ingredients

  • 2 tbsp cooking oil
  • 1.5KG pork loin
  • 1 tin chopped tomatoes
  • 200ml chicken stock
  • 1 Onion
  • 3 Carrots
  • 2 cloves garlic
  • 1tsp chopped rosemary
  • 1/2 tsp thyme
  • Salt/pepper (to taste)

Method

  1. Peel and chop the carrots and onions
  2. Put a large pan over a high heat and add the cooking oil
  3. While waiting for it to heat up, put the pork loin onto a plate
  4. Add the salt, pepper, rosemary and thyme to the loin and rub into (focusing on the meat rather than fat)
  5. Once the pan is hot, put the loin into it, and sear all sides (2-3 mins each side)
  6. Put the loin into the bottom of the slow cooker
  7. Empty the tinned tomatoes over the top of it
  8. Pour in the stock
  9. Add the carrots and onions
  10. Peel and crush the garlic into the slow cooker
  11. Put the lid on and cook on low for 8 hours
  12. Use two forks to shred the meat - serve in a bowl, with mash or noodles
