Chicken and Bacon in a Mustard and Cider Sauce

This is a fairly lazy meal, particularly if you want to cheat any buy pre-made mustard and cider sauce. Lazy, but tastes good.

You can make it a little healthier by substituting the cream out for something with less fat, though I personally wouldn't skip the lardons as they may be the only reason this is so tasty

Ingredients

  • 1 tbsp wholegrain mustard
  • 75ml double cream
  • 50ml cider
  • 500g Mini Chicken Fillets
  • 400g Bacon Lardons
  • Veg
  • Baby Potatoes
  • Cooking oil

Method

  1. Stab the baby potatoes thoroughly and put in the bottom of a steamer
  2. Chop your veg and add to the steamer
  3. Put the steamer on for 30 mins
  4. After 10 mins, warm a frying pan with a small drop of oil in the bottom
  5. Fry the chicken fillets until they're starting to turn golden brown
  6. Add the lardons and lightly fry them for a minute before reducing the heat a bit
  7. Stir in the cider, mustard and cream
  8. Simmer until reduced and thickened (about 15 mins)
  9. When serving, break the potatoes into chunks and pour the main over the top so they get nice and saucey
