Chops and Veg in Peppercorn Sauce

I like this recipe because it's relatively low effort - I can do a little bit at the beginning, and then wander off and rest for a while once things have gone in the oven

The recipe uses packet Peppercorn Sauce to keep the effort low, but you can also make your own peppercorn sauce.

Prep: 5 mins
Cooking: 25 mins
Total: 30 mins

Ingredients

  • Pack of 4 or 5 pork chops
  • Pack of baby corn
  • Pack of Mange-Tout or sugar snaps
  • Handful of new potatoes
  • Sachet of peppercorn sauce mix
  • 1/2 pint of Milk

Method

  1. Pre-heat the oven to 180c
  2. Chop the ends of the mange-tout
  3. Put the new potatoes into a steamer
  4. Load the mange-tout and babycorn into a steamer
  5. Once the Oven's at temperature, put the chops on a tray
  6. Turn the steamer on and set for 25 minutes
  7. Put the chops in the Oven and set the timer for 25 minutes
  8. Go rest for 15 minutes
  9. Start making up the peppercorn sauce, remove from the heat once it's reached your desired consistency
  10. Serve the potatoes and veg onto the centre of a plate
  11. Place the chops on top of the veg
  12. Give a generous coating of peppercorn sauce
