A simple mediterranean style traybake, gives tasty roasted vegetables in a sticky balsamic and honey glaze

Ingredients
- Pack of 8 or 12 sausages
- Pack of sliced chorizo
- 3 Peppers
- 2 large red onions
- 1 1/2 tbsp balsamic vinegar
- 1 tbsp clear runny honey
- 1 tsp dried basil
- Olive Oil
- Salt
- Pepper
Method
- Set the oven heating to 180c
- De-seed and chop the peppers into small chunks
- Peel and chop the onions into (roughly) 1cm slices
- Put the sausages, peppers and onions into a large roasting tin/casserole dish
- drizzle the oil over
- Grind some salt and pepper over
- Put the tray in the oven and bake for 15 mins
- Take the tray out and drizzle the balsamic vinegar and honey over
- Sprinkle the basil
- Add the Chorizo to the tray
- Mix around so that the vinegar and honey gets well distributed
- Put back in the oven for 15 minutes (or until the sausages are cooked)
- Serve with Mash
