Balsamic Sausage, Chorizo, Pepper and Red Onion Bake

A simple mediterranean style traybake, gives tasty roasted vegetables in a sticky balsamic and honey glaze

Cooking Time

Prep: 15 mins
Cooking: 30 mins
Total: 45 mins




  • Pack of 8 or 12 sausages
  • Pack of sliced chorizo
  • 3 Peppers
  • 2 large red onions
  • 1 1/2 tbsp balsamic vinegar
  • 1 tbsp clear runny honey
  • 1 tsp dried basil
  • Olive Oil
  • Salt
  • Pepper


  1. Set the oven heating to 180c
  2. De-seed and chop the peppers into small chunks
  3. Peel and chop the onions into (roughly) 1cm slices
  4. Put the sausages, peppers and onions into a large roasting tin/casserole dish
  5. drizzle the oil over
  6. Grind some salt and pepper over
  7. Put the tray in the oven and bake for 15 mins
  8. Take the tray out and drizzle the balsamic vinegar and honey over
  9. Sprinkle the basil
  10. Add the Chorizo to the tray
  11. Mix around so that the vinegar and honey gets well distributed
  12. Put back in the oven for 15 minutes (or until the sausages are cooked)
  13. Serve with Mash
